To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. Here it is sampled regularly by The Balvenie Malt Master David C. Under the watchful eye of The Dalmore's Master Distiller, this Highland single malt begins its maturation in American white oak ex-Bourbon casks, developing the distillery's signature notes of chocolate, orange and spice. It is then finished in casks that held a bespoke Sherry blend of aged Oloroso and rich Pedro Ximénez, crafted specifically to complement the house style.
